During her 4+ years at UnitedHealth she created strategies for product development and sales, benefit plan selection, claims adjudication, and customer service processes, and was a key member of the team that implemented the changes driven by the Affordable Care Act. Katlin Smith ‘15 (Panelist)
Founder & CEO, Simple Mills
https://www.simplemills.com

Katlin Smith, 27, is the founder and CEO of Chicago-based Simple Mills, a rising star in the natural foods space that is changing the way America bakes. The company's natural baking mixes soared to #1 in sales per store and #3 in total dollar sales in the category within two years after debuting on store shelves, thanks to super-clean ingredients and five-star consumer ratings for taste and texture. A cracker collection that launched in March 2016 has taken the brand beyond the baking aisle, providing new visibility along with an expanded retail footprint. Products are sold online as well as in more than 2,750 natural and conventional grocery stores across the country.

Nicole Doucet '16 (Panelist)
Co-Founder and CEO, Green Sheep Water
https://www.greensheepwater.com

Nicole is the Co-Founder and CEO of Green Sheep Water. After learning that 1,500 plastic bottles are used in the US every singe second, and that most of them end up in landfills and oceans, she decided to create a better bottled water company. By replacing plastic bottles with 100% aluminum bottles, which are the most recycled and recyclable beverage containers out there (more than plastic, glass, and yes, even cartons), Green Sheep Water gives people a more eco-friendly alternative that does not sacrifice convenience. Green Sheep Water launched in November 2014 in Chicago, where Nicole is also pursuing her MBA at Chicago Booth.
