Join fellow alumni in a unique wine tasting. You’ll learn the classic approach to tasting wine, how to distinguish the key characteristics of cabernet sauvignon, and sample an exquisite selection including wines made by winemakers from the University of Chicago family.
We’ll explore a range of cabernets, from Bordeaux style blends to single-estate wines. Each of three flights will feature a classic style from the region alongside a boutique wine made by a member of our University of Chicago family. This progression will provide an understanding of how the varietal’s characteristics change by terroir and appellation and how the winemaker leverages growing, blending, and winemaking techniques to create the final flavor in the bottle. A Level One Sommelier, also a Booth alum, Deenya Rabius will guide us through the tasting. Seating will be limited to 30 to ensure an intimate setting that engenders discussion and dialog. Food is limited to bread and crackers to clean the palette.
