The New World of wine is home to some of the brightest and boldest wines around. Many of our current impressions of wine originated in Europe. Their selections open doors into the past as well as demonstrate why the future is so bright. Come and find out for yourself why these two worlds are different in style of wine making, flavor profile and terroir, and enjoy some of our delectable hors d'oeuvres, as well.

Enoch Shully (Speaker)
Owner/Beverage Director, BIN 36
Mr. Enoch Shully has been involved in the food and wine industry for most his working life. Born in Central Africa, he has come to call Chicago home since moving to the United States. As Owner/Beverage Director of BIN 36, his understanding of the food and wine business in Chicago has grown and flourished.
Prior to his relocation, Mr. Shully has travelled and lived around the world, including Cape Town, South Africa for over a decade. There, he worked within the restaurant and hospitality industry in a variety of capacities. Mr. Shully speaks seven languages, but mostly enjoys the universal language of great food, wine, and hospitality. He lives in Chicago with his wife and daughter.

BIN 36 is a new American restaurant influenced by the modern evolving cuisine. BIN 36 uncorked a dynamic new era in contemporary wining and dining with its multifaceted, wine-driven concept. Overseen by Owner/Beverage Director Enoch Shully, the user-friendly BIN 36 wine program is based on a foundation of fifty wines. BIN 36's wine pairing system has been enthusiastically received, both locally and nationally.
Bin 36's Modern American cuisine is influenced by Mediterranean flavors and ingredients are sourced from local farmers, organic and sustainable resources, and the highest quality products we can find. It incorporates green building and recycled design materials, low-voltage lighting, and Energy Star equipment. Sustainable practices are followed in the kitchen, from an aggressive recycling program to a composting partnership with a city farm.
